Executive chef, food lover, proud Sicilian and a perfectionist for tradition and heritage, Fabio Cammarata has made it his life’s work to bring the tastes of his home country to Pretoria and the world.

His culinary career began early, inspired by his Southern Italian roots and a family that instilled in him the love and respect for quality and tradition.  Fabio used his love of food and the hospitality business to develop his own culinary identity.

Fabio is not only renowned for his gastronomic skill and high standards, but also his unique ability to keep things simple yet always interesting.

Tagliata Rucola e Grana
100g medium-rare sirloin, thinly sliced and served with rocket, grana padano cheese shavings and balsamic vinegar.
Melanzane Alla Parmigiana
Slices of brinjal layered with Napoletana sauce, mozzarella and parmesan. Baked in our pizza oven.
Slices of Fior di Latte mozzarella interlaid with slices of fresh tomatoes and basil. Drizzled with olive oil.
Insalata di Mare
Mixed seafood lightly blanched with fresh herbs, marinated in lemon and olive oil. Served with carrots, celery, green olives and mixed lettuce.

Lasagne alla Bolognese
Freshly made lasagne sheets baked with a ground beef and Napoletana sauce.
Spaghetti Aglio Olio e Peperoncino
Spaghetti served with freshly chopped garlic, extra virgin olive oil and fresh chilli.
Fusilli Panna e Salsiccia
Broken Italian pork sausage in a creamy white wine sauce.
Gnocchi al Gorgonzola e Noci
Homemade potato gnocchi in a dolce latte, gorgonzola cheese sauce. Finished with crushed walnuts.
Tagliatelle al Ragù
Our own tagliatelle made with free-range egg, served with a beef, red wine and herb sauce.
Tagliolini al Salmone
Fresh pasta with smoked salmon, flambeed in brandy with a creamy sauce.
Spaghetti Allo Scoglio
Mixed seafood with a Napoletana, herb and white wine sauce.
Penne al Pomodoro or Arrabbiata
Penne served with Napoletana sauce and garnished with basil. Arrabbbiata comes with added chilli.
